It’s perfect as a healthy ish dessert or for that afternoon tea / coffee break! The main protein source in this recipe is lupin flour, but if you can’t find it in your country, replace with chickpea flour.

Healthy Molten Lava Cookies

This cookie is the perfect trifecta between brownie yumminess, melted chocolate center and nutrition! I love it because it’s:

  1. Healthier than most molten lava cookie recipes I’ve seen.

  2. Incredible tasty and fudgy.

  3. Ingredients are mostly real food.

  4. It’s like eating a mini chocolate cake minus the calories of a whole piece of cake!

Ingredients

  • Almond flour

  • Lupin flour

  • Cacao powder

  • Peanut butter (or tahini)

  • Chocolate chips⁣

  • Maple syrup

  • Pinch of salt ⁣


Sweetness: this recipe is not crazy sweet, taste the batter and decide if you need it sweeter.

Dark chocolate chips: I make this recipe with more chips when I am going to share it, and less when it’s just for the fam at home, your call!

How to Make Molten Lava Protein Brownie Cookies?

You need a bowl and a baking pan.

  • Mix all ingredients but the chocolate chips in a bowl.

  • Cover a baking pan with parchment paper and form 1 walnut sized cookie from the mix.

  • Open it up from the top and insert 4-5 chocolate chips in the middle, and close the cookie.

  • Bake for a few minutes.

Molten Lava Protein Brownie Cookies

This yummy molten lava brownie cookie is packed with nutritious ingredients and protein. It’s refined sugar-free, plant based, eggless, gluten free, and tastes so damn yummy!

Ingredients (US Customary)

  • 1/2 cup almond flour
  • ⁣1/4 cup lupin flour ⁣(or chickpea flour)
  • 3 tbsp 100% cacao powder
  • 2 tbsp peanut butter (or tahini)
  • 1/4 cup water
  • 1/4 cup dark chocolate chips⁣
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Ingredients (Metric)

  • 48 grs almond flour
  • 30 grs lupin flour ⁣(or chickpea flour)
  • 3 tbsp 100% cacao powder
  • 2 tbsp peanut butter (or tahini)
  • 56 ml water
  • 45 grs dark chocolate chips⁣
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 370 F⁣.⁣
  2. In a bowl, combine all ingredients but the chocolate chips until you form a batter.
  3. Cover a baking pan with parchment paper, form 1 walnut sized cookie from the mix, open it up from the top and insert 3-4 chocolate chips in the middle, and close the cookie. (Add a tiny bit of extra batter on top if necessary to make sure it’s sealed.)
  4. Bake for 7-8 min. You are done.

Notes

Nut free: For a nut free option, use coconut flour instead of almond floor.
