This amazing treat is perfect for that mid afternoon time when you need an extra punch of energy or great as a healthy dessert too! Super tasty, healthyish and much much better that a regular marzipan. It’s gluten free, oil free, no bake, has a nut free option, no blend needed, and it tastes close to marzipan!

Healthy Marzipan Energy Bites
I wanted to create a much healthier marzipan version to be able to enjoy it as a healthy snack… and this is the result! Friends and family totally love this recipe, and I love t too because it’s:
Healthier than actual marzipan.
It has lentils, but you can’t tell I promise!
Ingredients are mostly whole foods.
It’s the perfect energy kick for an afternoon tea/coffee break.
Simple Ingredients
GF quick oats
Lentils
Nut butter (or tahini)
Maple syrup
Almond flour
Almond extract
Chia seeds
Dark chocolate chips (optional)
Don’t worry, you don’t taste the lentils, you taste the marzipan flavor. You can also use drained cooked chickpeas instead of cooked lentils. It will have a different color, but still super tasty.
Sweetener: I switch between maple syrup or raw agave, it works with both.
Dark chocolate chips: I make this recipe with chips when I am going to share it, but I skip them when I make it for my family. Your call!

No Bake Marzipan Energy Bites
This amazing treat is perfect for that mid afternoon time when you need an extra punch of energy or great as a healthy dessert too! Super tasty, healthyish and much much better that a regular marzipan. It’s gluten free, no bake, has a nut free option, no blend needed, and it tastes close to marzipan!
Ingredients (US Customary)
- 2 cups GF quick oats
- 1 cup cooked brown or green lentils (well drained)
- 1/2 cup nut butter or tahini (I used peanut butter)
- 1/2 cup maple syrup
- 1/2 cup almond flour
- 1 tsp almond extract (key for the marzipan flavor!!)
- 2 tbsp Chia seeds
- 3/4 cup dark chocolate chips (optional)
Ingredients (Metric)
- 160 grs GF quick oats
- 75 grs cooked brown or green lentils (well drained)
- 125 grs nut butter or tahini (I used peanut butter)
- 170 grs maple syrup
- 48 grs almond flour
- 1 tsp almond extract (key for the marzipan flavor!!)
- 2 tbsp Chia seeds
- 130 grs dark chocolate chips (optional)
Instructions
- Combine everything together in a bowl.
- Form 32 medium sized bites using your hands. If it’s too sticky, add a bit more almond flour.
- Eat them right away or store in the fridge (or freezer).
Notes
Sweetness: These are not super sweet because I made them for me and not for a party. If you want these for a party, I would add more sweetener!
Over cooking the lentils: Do not over cook the lentils for this recipe, if you do, you won’t be able to drain them properly and this recipe will turn out too sticky.
Dates option: I haven’t made these with dates instead of maple syrup but I bet that’s a great swap
