Vegan Taco Lentil Burger
I grew up eating home made burgers. My mom had a secret to always make them extra tasty. What was it, you ask? She added the perfect balance between onion and garlic. We used to enjoy burgers over the weekend, and while her burgers were meaty, she always added some soy meat too. I still enjoy this flavor from childhood by adding that perfect onion/garlic balance to these plant based burgers. I love these little guys because they are:
Healthier than store bought.
Easy to make with ingredients you probably already have.
Mostly whole foods, which means they are free of overly processed ingredients.
A fantastic source of protein to use as a post workout meal.
Only 7 Simple Ingredients
Black Lentils
Chickpea flour
Onion
Beets
Garlic
Olive oil
Taco seasoning
Salt
Lentils combine so well with the taco flavor, that it feels like you’re eating tacos in a burger form. You can also use drained cooked brown lentils instead of black lentils, just make sure you drain them properly and don’t over cook them. Canned lentils should work ok too.
Chickpea flour: it helps in getting that burger texture and adds protein content as well. However, if you can’t find chickpea flour, whole wheat flour or oat flour work too.
Saltiness: While I use 1 tsp of salt for this recipe, and taco seasoning from Trader Joe’s, I recommend you taste the burgers just with taco seasoning first, and then adjust salt accordingly. Some taco seasonings come with more salt than others, hence you will need to adjust the amount based on the type of taco seasoning you use.
Beets add nutrition, texture and that gorgeous purple color, do not skip this ingredient.
How to Make Vegan Taco Lentil Burgers?
You need a good knife, a cutting board and a medium bowl to combine all ingredients.
Better to chop all veggies first.
Then sauté onion with garlic.
Finally, mix everything in the bowl with your hands or a large wood spoon, and form the patties.
You can cook them and eat these burgers right away or leave them cooked in the fridge for later. They are tasty cold, too.
You can store them in the fridge for 6 -7 days.

Ingredients (US Customary)
- 2 cups cooked black lentils (or brown)
- 1/2 cup chickpea flour
- 1/2 medium white onion (3/4 cup chopped)
- 1 medium cooked beet (2/3 cup chopped
- 3 small garlic cloves
- 2 tsp olive oil
- 3 tsp taco seasoning
- 1 tsp salt
Ingredients (Metric)
- 150 grs cooked black lentils (or brown)
- 45 grs chickpea flour
- 115 grs white onion
- 1 medium cooked beet
- 3 small garlic cloves
- 2 tsp olive oil
- 3 tsp taco seasoning
- 1 tsp salt
Instructions
- Chop veggies and add 1 tsp olive oil, sauté onion for 3 minutes.
- Add garlic and sauté for 2 more minutes.
- In bowl mix everything and kind of knead it with your hands for 1-2 minutes.
- Form 6 medium size patties (guessing this is perfect for 4 large ones).
- Warm up a saucepan, add the other 1 tsp olive oil and sauté the burgers for 2 ½ - 3 min on each side.
- Add your favorite toppings and enjoy!
Notes
Protein content: to increase protein content, you can use vital wheat flour or lupin flour instead of chickpea flour.
Salt: I use taco seasoning from Trader Joe’s, if you use a different one, you will want to adjust salt content. Some taco seasoning brands are saltier than others.
Texture: if you don’t like your burgers with chunks, you can add this burger mix to the food processor. However, I’d say these are tastier with chunks.
