It’s the perfect mix between brownies and cheesecake but without all the baking… Oh! And also without a ton of saturated fats and processed sugars. This option is so much healthier than traditional recipes but equally yummy.
Healthy No Bake Cheesecake Brownie Bars

Super quick and easy to make since it’s no-bake.
Ingredients are mostly whole foods.
It provides enough energy to use it as a pre-workout meal.
Ingredients
Chickpeas
Rice
Cashews
Dates
Maple syrup
Tahini
Coconut cream
Coconut oil
Cocoa powder
Lemon juice
Dark chocolate chunks (optional)
You can use lentils instead of chickpeas if you prefer, just don’t over cook them and make sure to drain them properly.
I used cooked black rice in this recipe but any cooked rice works, use what you have.
How to Make Vegan Cheesecake Brownie Bars
You do you need a good food processor. I use a Ninja Blender for this type of recipe.
Process brownie ingredients and pour batter in a baking pan.
Process cheesecake ingredients and pour this mix on top of the brownie layer.
Pop it in the freezer for 3-4 hours (or overnight) and enjoy!

No-Bake Cheesecake Brownie Bars

Ingredients Brownie Layer
- 1/2 cup cocoa powder
- 1 cup dates (12 medium medjool dates)
- 3 tbsp maple syrup
- 1 1/2 cups cooked chickpeas
- 1 cup cooked black rice
- 1/4 cup tahini
- 1/4 cup dark chocolate chips or chunks (optional)
Ingredients Cheesecake Layer
- 1 1/2 cups cashews
- 2 tbsp coconut cream
- 1 tbsp coconut oil
- 3 tbsp fresh lemon juice
- 3 tbsp maple syrup
- 1/2 tsp vanilla extract
Instructions
- Brownie layer:
- Put everything except the cocoa powder in the food processor and mix until batter is smooth.
- Then add the cocoa, process again until smooth.
- Pour the batter into a baking pan (I use an 9”x9” Pyrex) with parchment paper and press mix evenly into the pan.
- Put the pan in the freezer for 20 minutes to settle.
- Vegan cheesecake layer:
- Soak the cashews in hot water for 15-20 minutes and drain.
- Put everything in the food processor and process until mix is smooth.
- Pour the cheesecake mix on top of the brownie layer and put it back in the freezer for 3-4 hours or overnight.
- While frozen, cut into small squares and enjoy! Keep leftovers in the freezer.
- Optional toppings: add dark chocolate chips (or chunks) and creamy peanut butter.
Notes
Chickpeas replacement: you can use lentils instead of chickpeas if you prefer, just make sure to not over cook them and drain them properly.
Rice: I used cooked black rice in this recipe but any cooked rice works, use what you have!
