Super tasty, healthyish and much much better that a regular marzipan. It’s gluten free, oil free, no bake, has a nut free option, no blend needed, and it tastes close to marzipan!
These little energy bites are perfect as a healthy snack, dessert, or to bring on the road! It has the best of two worlds marzipan and health! Super nutritious; and you’d never guess it even has lentils!
Healthy Marzipan Energy Bites
I wanted to create a much healthier marzipan version to be able to enjoy it as a healthy snack… and this is the result! Friends and family totally love this recipe, and I love t too because it’s:
Healthier than actual marzipan.
It has lentils, but you can’t tell I promise!
Ingredients are mostly whole foods.
It’s the perfect energy kick for an afternoon tea/coffee break.
Simple Ingredients
GF quick oats
Lentils
Nut butter (or tahini)
Maple syrup
Almond flour
Almond extract
Chia seeds
Dark chocolate chips (optional)
Don’t worry, you don’t taste the lentils, you taste the marzipan flavor. You can also use drained cooked chickpeas instead of cooked lentils. It will have a different color, but still super tasty.
Sweetener: I switch between maple syrup or raw agave, it works with both.
Dark chocolate chips: I make this recipe with chips when I am going to share it, but I skip them when I make it for my family. Your call!
How to Make Vegan Marzipan Energy Bites?
You just need a bowl.
Combine everything together in a bowl.
Form medium size bites using your hands.
Eat them right away or store in the fridge (or freezer).
