Mini No-Bake Lemon Pies (Vegan Recipe)
If you love traditional lemon pie, you have to try this version! This recipe is much healthier than most lemon pie recipes I’ve seen. It’s refined sugar-free, soy free, eggless, gluten free, no oven needed, and tastes too good to pass!

Healthy Vegan Mini Lemon Pies

Simple Ingredients
GF quick oats
Black beans
Sesame paste
Maple syrup
Lemon zest
Fresh lemon juice
Cashews
Coconut cream
Coconut oil
Maple syrup
Turmeric
Don’t worry, you don’t taste the black beans; you taste the oats, maple syrup and sesame paste. You can also use drained cooked chickpeas instead of cooked black beans. It will change the flavor a bit, but will still be tasty.
Sesame paste: sesame paste is made with toasted sesame seeds, so it provides an amazing nutty flavor. I usually make my own by toasting sesame seeds and then blending them in the food processor, but you can just buy it if you prefer.
How to Make No Bake Mini Lemon Pies?
You do you need a good food processor to make the filling. I use a Ninja Blender for this type of recipe.
For the crust mix everything in a bowl and squeeze it a few times to break open the black beans.
Fill four muffin cups with this mix and put it in the freezer.
For the filling, mix everything in the food processor until creamy and smooth.
Add this lemon cream on top of the crust and back to the freezer for 20-25 minutes. You are done.

Ingredients crust
- 1/2 cup GF quick oats
- 1/4 cup cooked black beans
- 2 tbsp sesame paste
- 1 tbsp maple syrup
- 1 tbsp coconut oil
Ingredients filling
- Zest from 1 lemon (1 1/2 tsp aprox)
- 4 tbsp fresh lemon juice
- 3/4 cup cashews
- 3 tbsp coconut cream (thick part from can)
- 1 tbsp maple syrup
- 1 tbsp coconut oil
- 1/4 tsp turmeric powder (for color)
Instructions
- Method crust: mix everything in a bowl and squeeze it a few times to break open the black beans. I wanted small chunks but alternately you can mash the beans first.
- Fill four muffin cups with this mix and put it in the freezer. Silicone muffin cups are better for this.
- Method filling: mix everything in the food processor until creamy and smooth.
- Add this lemon filling on top of the crust and back to the freezer for 20-25 minutes. You are done.
- Keep in mind this recipe is not super sweet, so you might want to add another tbsp of maple syrup. Taste it and decide.
- Keep leftovers in the freezer, it's kind of creamy lemon ice cream.
Notes
Black beans: don’t worry, you don’t taste the black beans in the curst; only the oats, maple syrup and sesame paste. You can also use drained cooked chickpeas instead of cooked black beans if you prefer. It will change the flavor a bit, but still be tasty.
Sesame paste: sesame paste is made with toasted sesame seeds, so it provides an amazing nutty flavor. I usually make my own by toasting sesame seeds and then blending them in the food processor, but you can just buy it too.
