Healthy Energy Bites
I was looking for a super quick and easy snack to make and, since many friends asked me for a nut free snack, I thought about mixing very few ingredients to create a simple yet delicious bite. I love this recipe because it’s:
Healthy but also super tasty.
Super quick and easy to make.
Ingredients are only whole foods.
It provides enough energy to use it during a hike or during a road trip!
Only 4 Simple Ingredients
Sunflower seeds
Medjool dates
Tahini
Cocoa powder
You do need a food processor for this one and you will also have to scrape the sides because it’s a thick mix.
How to Make Sunflower Seed Energy Bites?
You need a good food processor. I use a Ninja Blender for this type of recipe. Yes, it’s called a “blender” but acts as a strong food processor.
Better to process the dates with the tahini first.
Then add the sunflower seeds and mix again.
Finally, add the cocoa powder.
You can eat this energy bite right away or leave them in the fridge for a few minutes if you prefer them a bit firmer.
You can store them in the fridge or freeze the leftovers!

Sunflower Seed Energy Bites
These fantastic vegan energy bites contain only 4 ingredients and can be eaten with breakfast, as a snack, or for dessert! They’re refined sugar-free, nut free, oil free, eggless, gluten free, and taste great!
Ingredients (US Customary)
- 1 cup sunflower seeds
- 1 cup pitted medjool dates (about 10 large dates)
- 3 tbsp tahini
- 4 tbsp 100% organic cocoa powder
Ingredients (Metric)
- 133 grs sunflower seeds
- 175 grs pitted medjool dates (about 10 large dates)
- 3 tbsp tahini
- 4 tbsp 100% organic cocoa powder
Instructions
- Throw dates and tahini in the food processor, blend until you have a paste. Then add the sunflower seeds and cocoa powder, blend a bit more until everything is in small pieces.
- Form the bites, I make 25 medium bites with this recipe, approximately walnut sized.
- Roll some bites in the extra cocoa powder to coat them and enjoy!! Alternately, leave them in the firdge for 15 minutes if you prefer them firmer.
- Store extras in the fridge or freezer if you have leftovers.
Notes
Vanilla extract: adding 1 tsp of vanilla extract is a great optional addition to this flavor profile.
Cinnamon: instead of vanilla sometimes I have added a bit of cinnamon powder, loved that option too!
No dates? use raisins instead.
