Protein Chocolate Chip Cookies (Vegan Recipe)

These vegan chocolate chip cookies are incredibly tasty, easy to make, and are heathy and nutritious enough to be eaten for breakfast. They’re naturally protein-rich, refined sugar-free, eggless, gluten free, and tastes amazing!

It’s perfect as a healthy snack or dessert, and a great idea to bring on a hike or long walk.

Healthy Protein Chocolate Chips Cookies

Why are these healthy? The typical protein cookie calls for processed protein powder, but not this one. To increase protein content I use white sweet Lupini flour instead. Why do I recommend this recipe?

  1. Healthier than most protein cookie recipes I’ve seen.

  2. Super quick and easy to make.

  3. Ingredients are mostly whole foods, which means it’s oil free.

  4. Because it’s so damn yummy!!

Simple Ingredients

  • Lupini flour

  • Chia seeds

  • Dark chocolate chips

  • Peanut butter

  • Baking soda

  • Baking powder

  • Vanilla extract

  • Almond milk

  • Coconut sugar


Lupini flour: it’s 40% protein and is my favorite protein ingredient to add to cakes, bread, waffles, pancakes, and cookies.

Sweetener: While I use coconut sugar, just use any sweetener you have. You may need to adjust the amount based on the type of sweetener you use though.

Dark chocolate chips: I make this recipe with 1/2 cup when I’m going to share it in a party, but I only use 1/4 cup when I make it for myself. Your call!

How to Make Protein Chocolate Chips Cookies?

You need a bowl, a hand mixer, and the oven.

  • Mix everything but the chocolate chips with a hand mixer.

  • Then fold in the chocolate chips.

  • Split the mix into large cookies on a greased cookie sheet and bake.

  • Better to store leftovers in the fridge!

Ingredients (US Customary)

  • 1 cup lupini flour
  • 3 chia eggs (3 tbsp chia seeds soaked in 5 tbsp water x 15 min.)
  • 1/2 cup coconut sugar
  • 1/2 cup dark chocolate chips
  • 1/2 cup peanut butter
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 cup almond milk

Ingredients (Metric)

  • 98 grs lupini flour
  • 3 chia eggs (3 tbsp chia seeds soaked in 5 tbsp water x 15 min.)
  • 95 grs coconut sugar
  • 90 grs dark chocolate chips
  • 125 grs peanut butter
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 120 ml almond milk

Instructions

  1. Preheat oven to 375 F (190 C).
  2. Mix everything but the chocolate chips with a hand mixer. Then fold in the chocolate chips with a spoon or spatula.
  3. With a tbsp split the mix into 13 large cookies on a greased cookie sheet and bake for 15-17 minutes. Every oven is different and it’s up to you how gooey you prefer your cookies. Also, guessing you can make up to 26-28 small cookies with this recipe. If you make small cookies, just make sure you only leave them in the oven for 7-10 minutes.
