Easy Protein Brownies (Vegan Recipe)
These easy vegan protein brownies contain only 110 calories per portion, and do not need a food processor. These beauties are amazingly yummy, healthy, vegan, gluten free, naturally protein rich, refined sugar-free, and have a nut free option. I’ve added also an optional cashew cream recipe at the end!

This is a fantastic idea to use those bananas that are going bad instead of just making the typical banana bread. Because this recipe is much healthier than most brownie recipes, it can be eaten as breakfast or as a healthy snack…. oh… did I mention they are amazingly chewy??
Easy Protein Brownie
This brownie was born during our isolation time due to the corona virus. I wanted a quick and easy recipe that everyone could enjoy at home!! I am a fan of brownies but I definitely prefer to make them at home to monitor the ingredients and to keep them healthy. If you love chocolate and bananas, like me, you will really enjoy this treat! Only 6 Simple Ingredients
Bananas
Nut butter
Cocoa powder
Lupin flour
Maple syrup
Dark chocolate chips (optional)
Lupin flour: Love it and is 40% protein. However, keep in mind lupin beans come from the same family as peanuts.
Sweetener: While I use maple syrup for this recipe you can use agave instead, or any sweetener you have. You will probably need to adjust the amount based on the type of sweetener you use though.
Dark chocolate chips: I make this recipe with chips when I am going to share it, but I skip them when I make it for myself. Your call!
How to Make Easy Protein Brownies?
You need a mixing bowl and a baking pan.
Mash the bananas
Add everything else and pour evenly into baking pan
Put it in the oven til cooked throughly!
Wait for it to cool down, enjoy!

Easy Protein Brownies

Ingredients (US Customary)
- 3 medium bananas (1 1/4 cup mashed)
- 3 tbs nut butter (or sunflower butter or tahini)
- 1/2 cup 100% cocoa powder
- 1/2 cup lupin flour (or chickpea flour)
- 3 tbs maple syrup
- 1 1/2 tsp baking powder
- 1/4 cup water
- 1/4 cup chocolate chips (optional)
Ingredients (Metric)
- 375 grs bananas (1 1/4 cup mashed)
- 3 tbs nut butter (or sunflower butter or tahini)
- 50 grs 100% cocoa powder
- 60 grs lupin flour (or chickpea flour)
- 3 tbs maple syrup
- 1 1/2 tsp baking powder
- 1/4 cup water
- 45 grs chocolate chips (optional)
Instructions
- Preheat oven to 350 F (177 C).
- In a bowl, mash the bananas and then stir in the rest of the ingredients, except the chocolate chips, until smooth.
- Add the chocolate chips by folding them into the mix.
- Slightly grease a baking pan.
- Pour the batter evenly and bake for 18-20 minutes (I baked them for 20 and they came out with perfect texture!). My baking pan is 9”x9” BTW.
- Remove from the oven and be patient. Wait for the brownies to cool before eating. Worth the wait, I promise.
Notes
Toppings: home made cashew cream, creamy peanut butter and dark chocolate.
Cashew cream: 3/4 cup cashews, 3 tbs powdered sugar, 1/3 cup water. Method: Throw everything in the food processor until smooth. Faster if you soak the cashews beforehand, and if you do so you will need less water.
Maple syrup: you might want to skip the maple syrup if your bananas are sweet enough, taste the mix the decide!
Banana replacement: this recipe should work ok with mashed sweet potato instead of bananas.
Nut butter: I used peanut butter this time and loved the result.
