It’s perfect with hummus, salsa, lentil dal, or for sandwiches; and a great idea when you run out of bread but aren’t in the mood to bake. It’s nutritious and you’d never guess it has chickpea flour!
Healthy Vegan Protein Bread
I am addicted to bread. When I was a child growing up in Chilean Patagonia my mom would bake fresh bread in the morning in a wood oven, and sometimes fresh bread was ready right on time for breakfast! It was hard to control myself with warm fresh bread so mom always made sure to control our portions (especially mine!). Sometimes when mom wasn’t in the mood for baking bread, she made this easy fast bread in a saucepan (thanks mom!!). Nowadays, while I don’t eat as much bread as I used to, when I do I make sure it’s tasty and also healthy. I love this recipe because it’s:

Only 5 Ingredients
Chickpea flour
Oat flour
Vital wheat flour
Baking powder
Salt
Don’t worry, you don’t taste the chickpea flour, you taste the oat flour more than anything else. If you don’t have chickpea flour, replace it with extra oat flour.
Oat flour: If you don’t have this ingredient, remember you can make some in the food processor with quick oats or regular oats!
Vital wheat: if you are allergic to gluten, replace with chickpea flour or lupin flour. Also, I only use non-GMO vital wheat flour.
How to Make Easy Saucepan Protein Bread?
You need a bowl and a nonstick saucepan for this recipe.
Mix dry ingredients first and then add warm water slowly.
Mix and knead the dough for a few minutes.
Split the dough, roll into balls, and flatten them.
Cook in a saucepan what you are going to eat, and freeze the other unbaked breads for another day.
To freeze them separate them with a plastic or parchment paper layer.

Easy Saucepan Protein Bread

Ingredients (US Customary)
- 1 cup chickpea flour
- 1 cup oat flour
- 1/4 cup vital wheat flour
- 2 tsp baking powder
- 1/2 cup + 2 tbsp warm water
- 1/2 tsp salt
- 1/2 tsp oregano (optional)
Ingredients (Metric)
- 90 grs chickpea flour
- 100 grs oat flour
- 32 grs vital wheat flour
- 2 tsp baking powder
- 1/2 cup + 2 tbsp warm water
- 1/2 tsp salt
- 1/2 tsp oregano (optional)
Instructions
- Mix the flour with the baking powder and spices in a bowl, add the warm water slowly and start mixing and kneading the dough.
- Knead for 5-6 minutes.
- Split the dough into 6 balls and flatten each one to make it look like pita bread. I use my hands for this, but you can use a roller if you prefer. They need to be thin as seen in the pictures.
- Warm up a non stick saucepan and cook the bread around 2-2 1/2 minutes on each side, or till it’s a bit brown like in the pics. Enjoy!!
- If the dough is a bit sticky just add a bit more flour. Also, these are better fresh, if you have extra dough, freeze it.
Notes
Better fresh: this bread is meant to be eaten fresh. For leftover dough, better to freeze it.
Oil: while this recipe is oil free, you do need a good nonstick saucepan. If you don't have one, try adding some oil to your saucepan when you cook it.
Gluten free option: replace the vital wheat flour with oat flour.
