It’s the perfect energy boost treat for those days when you’re extra sleepy!
Incredibly Yummy Protein Cashew Coffee
While I try to keep my coffee intake to one cup per day, there is one day a week when I indulge in extra cups. This usually happens on a Friday afternoon, and this recipe does a perfect job for that extra boost of energy I sometimes need. I love this recipe because it’s:
Delicious and healthier than many store bought equivalents. No 10-syllable ingredients here.
Fast fast to make. You can make it in 90 seconds.
Make with whole cashews
A great post-workout meal alternative!
Only 5 Simple Ingredients
Coffee
Cashews
Maple syrup
Protein powder
Cinnamon
Cashews: I used raw cashew pieces from Trader Joe’s and loved the flavor. This also works ok with roasted unsalted cashews.
Nut free option: you can use 2 tbsp of tahini or coconut cream instead of cashews for a nut free option.
Sweetener: While I use maple syrup for this recipe you could use dates instead. Just make sure you blend it thoroughly.
Coffee: I made my coffee a bit stronger than usual for this recipe and I preferred it that way.
How to Make Protein Cashew Coffee?
You just need a blender.
Blend the coffee with the cashews and maple syrup for one minute in a blender.
Once the mix is totally smooth, add your protein of choice.
Taste it and add more maple syrup to taste if necessary. To me it was sweet enough as is.
Pour it in a cup and add a pinch of cinnamon on top.
Option: this coffee is also amazing without the protein if you just want a naturally creamy coffee.
This Vegan Protein Coffee Is
Gluten free
Egg-free
Soy free
Dairy-free (without butter)
Healthier than many store bought options I’ve seen
Refined sugar-free
Easy and fast to make
Amazing as an energy drink and also great as a post-workout meal
