Soba Noodle Stir Fry with Black Beans
Instead of using sesame paste, this time I went with nutritional yeast, and the result was incredible! I love it because it’s:
Healthier than most soba noddle recipes I’ve seen.
Quick and easy to make.
Ingredients are mostly whole foods.
It’s high in protein and use it as a post workout meal sometimes!
Simple Ingredients
Soba noodles
Black beans
Italian tofurky
Onion
Mushrooms
Broccoli florets
Green beans
Soy sauce
Nutritional yeast
Sesame oil
Sesame seeds
Baked tofu (optional)
Italian tofurky is a vegan type of sausage I buy in the USA, if you don’t have this option in your country, replace with tofu and some italian seasoning.
Sesame oil gives this recipe that traditional soba dishes flavor, try not to skip it!
How to Make Soba Noodle Stir Fry with Black Beans?
You need two pots for this recipe.
In a small pot, boil water and cook the noodles for a bit less time than the recommendation to leave them al dente.
In a large pot, add the sesame oil and sauté the onion for a few minutes.
Add the rest of the veggies, nutritional yeast, and soy sauce and cook for another 5 minutes.
Add the beans, water, and tofu, cook a bit more.
Turn it off, add the cooked soba noodles, stir, top with sesame seeds, and serve!

Soba Noodle Stir Fry with Black Beans

Ingredients (US Customary)
- 3.5 oz Soba noodles
- 1 3/4 cups (15 oz) cooked black beans (1 can)
- 3.5 oz Italian tofurky
- 1 chopped medium yellow onion
- 5 oz mushrooms (chopped)
- 2 cups frozen broccoli florets
- 1 1/2 cups frozen cut green beans
- 1 cup water
- 1/3 cup soy sauce (I use low sodium)
- 1 1/2 tbsp nutritional yeast
- 1 tbsp cold pressed sesame oil
- 2 tsp sesame seeds (topping)
- 4 oz baked tofu (optional)
- Pepper to taste
Ingredients (Metric)
- 100 grs Soba noodles
- 425 grs cooked black beans (1 can)
- 100 grs Italian tofurky
- 1 chopped medium yellow onion
- 142 grs mushrooms (chopped)
- 170 grs frozen broccoli florets
- 191 grs frozen cut green beans
- 250 ml water
- 83 ml soy sauce (I use low sodium)
- 1 1/2 tbsp nutritional yeast
- 1 tbsp cold pressed sesame oil
- 2 tsp sesame seeds (topping)
- 113 grs baked tofu (optional)
- Pepper to taste
Instructions
- Boil water and cook the noodles for a bit less time than the recommendation to leave them al dente.
- In a large pot, add the sesame oil and sauté the onion for 5 minutes.
- Add the green beans, broccoli, mushrooms, nutritional yeast, and soy sauce and cook over medium heat for another 5 minutes.
- Add the cooked black beans, water, Tofurky, and pepper to taste, and give it another 5-7 minutes.
- Turn off the heat, add the cooked soba noodles, stir, top with sesame seeds, and serve!
Notes
Protein content: to increase protein content I also added 4zo of baked tofu.
Nutritional yeast: this ingredient gives the recipe a great nutty cheese flavor, however, if you prefer to the traditional flavor of a soba noodle recipe, replace it with sesame paste.
